Looking for a simple vegetarian lunch recipe? This Greek Quinoa Salad is for you!
Prep a batch before the busy week starts, and you’ll have an easy assembly lunch ready for busy weekdays.
I served with homemade hummus and Trader Joe’s whole-wheat pita for a satisfying lunch combo.

We enjoyed this served in a whole-wheat pita with hummus and kalamata olives. Think Greek Stuffed Pita Pockets!
