Prep a batch before the busy week starts, and you’ll have an easy assembly lunch ready for busy weekdays. 

I served with homemade hummus and Trader Joe’s whole-wheat pita for a satisfying lunch combo.

The Easiest Greek Quinoa Salad 

INGREDIENTS

  • 2 cups cooked quinoa
  • 2 cups cherry tomatoes, sliced in half
  • 1 cup diced cucumbers 
  • ⅓ cup diced red onion 
  • ½ cup crumbled feta cheese
  • ⅓ cup chopped parsley 
  • 1 teaspoon garlic powder 
  • Juice from one lemon 
  • 3 tablespoons olive oil 
  • Salt and pepper to taste 

INSTRUCTIONS

  1. In a medium bowl combine the quinoa, tomatoes, cucumber, red onion, feta cheese, parsley, and garlic powder. 
  2. Add the fresh lemon juice and olive oil. Mix together well. Add salt and pepper to taste. Serve and enjoy! 

Serving Tips 

We enjoyed this served in a whole-wheat pita with hummus and kalamata olives. Think Greek Stuffed Pita Pockets!
