I served with homemade hummus and Trader Joe’s whole-wheat pita for a satisfying lunch combo.
The Easiest Greek Quinoa Salad
INGREDIENTS
- 2 cups cooked quinoa
- 2 cups cherry tomatoes, sliced in half
- 1 cup diced cucumbers
- ⅓ cup diced red onion
- ½ cup crumbled feta cheese
- ⅓ cup chopped parsley
- 1 teaspoon garlic powder
- Juice from one lemon
- 3 tablespoons olive oil
- Salt and pepper to taste
INSTRUCTIONS
- In a medium bowl combine the quinoa, tomatoes, cucumber, red onion, feta cheese, parsley, and garlic powder.
- Add the fresh lemon juice and olive oil. Mix together well. Add salt and pepper to taste. Serve and enjoy!
Serving Tips
