Summer Vegetable Orzo Salad

Summer Vegetable Orzo Salad made with fresh herbs, cucumbers, tomatoes, and crumbled feta cheese. This easy pasta salad makes a perfect side dish for your next summer picnic or potluck! Enjoy leftovers for quick and healthy lunches during the week. 

The idea for this orzo salad came to me at a cooking class with my mom. We made a variation of this orzo salad, and I’ve been making orzo ever since. It was one of those moments I gained confidence preparing an ingredient that I wasn’t used to cooking on my own. 

Don’t be afraid to cook a new grain and add variety to your meals and snacks!

Summer Vegetable Orzo Salad

Ingredients 

Serves 6 

The Salad 

  • 4 cups vegetable broth 
  • 1 ½ cups orzo 
  • 15 ounce can Garbanzo beans, drained and rinsed
  • 2 cups grape tomatoes, halved
  • 1 cup red onion, finely chopped 
  • 1 cup English cucumber, finely chopped 
  • ⅓ cup fresh basil, chopped 
  • ¼ cup fresh oregano, chopped 
  • ⅓ cup fresh parsley, chopped 
  • ½ cup slivered almonds 
  • 4 ounces Feta cheese, crumbled 
  • Salt and pepper 

The Dressing 

  • ½ cup olive oil 
  • ¼ cup red wine vinegar 
  • 2 tablespoons lemon juice
  • 1-½ teaspoons local honey 
  • 1 teaspoon salt
  • ½ teaspoon pepper 

Instructions 

  1. In a large pot, bring the broth to a boil. Stir in the orzo; cover partially and cook for 7 minutes until pasta is al dente. Drain the orzo and put it in a large serving bowl to cool. 
  2. Prepare the dressing: combine olive oil, red wine vinegar, lemon juice, honey, salt, and pepper in a small blender or food processor. Blend until well combined. Set aside. 
  3. Once the orzo has cooled, add the remaining salad ingredients: garbanzo beans, tomatoes, onion, cucumber, herbs, almonds, and cheese. Season with salt and pepper to taste. Toss with the dressing and serve at room temperature. 

Notes

We love this Summer Vegetable Orzo Salad salad served over fresh greens like spinach and arugula. To make it a meal, add your protein of choice, like grilled or roasted chicken or salmon. 

For Gluten Free substitutions, use quinoa in place of orzo. It still tastes delicious! 

The fresh herbs give this salad a vibrant flavor! However, if needed, you could substitute with dried herbs.
