Simple Cabbage Slaw 

Ingredients

  • ½ cup plain greek yogurt 
  • ¼ cup white onion, diced small
  • 2 tablespoons avocado oil (or olive oil)
  • 1 tablespoon apple cider vinegar
  • Juice of 1 lime 
  • ½ teaspoon fine sea salt 
  • Freshly ground pepper to taste 
  • 5 cups purple cabbage, thinly sliced 
  • ½ cup cilantro, chopped 
  • Optional: 1 jalapeno pepper, chopped, seeds removed

Instructions 

  1. In a medium bowl, combine greek yogurt, onion, oil, vinegar, lime, salt, and pepper. Whisk together. 
  2. Add cabbage, cilantro, and jalapeno pepper (if using) to the same bowl. Stir until well combined.
  3. Refrigerate for at least 1 hour before serving for best results. Leftovers can be stored in an airtight container for up to 5 days.
