Loaded Veggie Nachos

Does anyone else get into the spirit of Superbowl Sunday snacks? 

When I was a little girl Superbowl Sunday meant I got to hang out with my neighborhood friends. While our parents and brothers watched football, my girlfriends and I would eat all the chicken tenders, nachos, chips, and dips. Every kid’s dream, right? 

In the spirit of Superbowl Sunday, here’s a crowd-pleaser recipe you can’t go wrong with: Loaded Veggie Nachos. 

Plus, this recipe doesn’t need to be limited to the Superbowl. Enjoy these nachos for an easy weeknight appetizer or main meal. There’s nothing wrong with nachos as a weeknight dinner!

Loaded Veggie Nachos 

INGREDIENTS 

  • 8 ounces tortilla chips
  • 15-ounce can of black beans, drained and rinsed  
  • 1 cup shredded cheddar cheese 
  • 1 cup shredded Monterey Jack cheese 
  • 15-ounce can corn, rinsed and drained 
  • 1 red bell pepper, sliced 
  • ¼ cup chopped green onions 
  • ¼ cup chopped cilantro leaves 
  • 1 avocado, diced 
  • Pickled jalapenos 
  • Salsa 

INSTRUCTIONS 

  1. Preheat the oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper. Spread tortilla chips evenly over the baking sheet. Top with pinto beans, cheese, bell pepper, and corn. Bake for 10-12 minutes or until the cheese is melted. 
  2. Once removed from the oven, sprinkle green onion, cilantro leaves, avocado, and jalapenos over top. Serve immediately with a side of salsa.
