Lemon Blueberry Chia Seed Muffins

Looking for a taste of Spring? These Lemon Blueberry Chia Seed Muffins are a fun twist on traditional poppy seed muffins! Made with wholesome ingredients and bursting with flavor. 

I’ve been craving a lemony treat, and these hit the spot. The sweetness of the blueberries pairs well with the citrus. Also, these are gluten-free friendly for those with Celiac Disease, when using gluten-free oats.

Lemon Blueberry Chia Seed Muffins 

Makes 12 Muffins 


  • 1 cup oat flour (made from oats, see directions below)
  • 1 cup almond flour 
  • ¼ teaspoon salt 
  • 1 teaspoon baking soda 
  • ⅓ cup honey 
  • 2 eggs beaten 
  • 1 teaspoon vanilla extract
  • ½ cup unsweetened almond milk
  • 1 teaspoon lemon juice
  • 1 tablespoon lemon zest
  • 2 tablespoons plain greek yogurt
  • 1 tablespoon chia seeds 
  • 1 cup blueberries, fresh or frozen


  1. Preheat oven to 350 degrees Fahrenheit. Line a 12 pc muffin tin with liners. Spray inside of liners with nonstick spray to prevent sticking. 
  2. To make oat flour, simply add oats to a food processor or blender. Blend until oats become a fine flour mixture. 
  3. In a large mixing bowl combine oat flour, almond flour, salt, and baking powder. Stir ingredients together. 
  4. In a second mixing bowl, combine eggs, honey, vanilla, almond milk, yogurt, lemon juice, and lemon zest. Whisk until well combined. 
  5. Add dry ingredients to wet ingredients and stir until well combined. Stir in chia seeds. Gently fold in blueberries. 
  6. Scoop batter into muffin tins, filling ¾ of the way full. Bake for 18-20 minutes, or until a toothpick comes out clean. 
  7. Transfer muffins to a cooling rack and let sit for 10 minutes. Enjoy!
