Fig & Arugula Pizza with Caramelized Onion

For 3 years, my mom and I have traveled to Napa Valley for Landmark Vineyards’ Pig, Pizza, and Pinot party. In the absence of the party this year, we decided to make our own version of this popular event. With recipes inspired by The Girl & The Fig cookbook and our favorite glass of Pinot Noir, it was a delightful taste of Napa/Sonoma Valley.

Here’s the Fig & Arugula Pizza that we created in celebration! Take your pizza next level with this recipe.

Fig & Arugula Pizza with Caramelized Onion 

Ingredients 

  • 1 yellow onion, sliced
  • 12 dried mission figs, cut into thirds 
  • 5 ounces goat cheese, crumbled 
  • 1-2 handfuls arugula, fresh 
  • ¼ cup balsamic vinegar 
  • Olive oil for brushing
  • Store-bought pizza dough*

*We used fresh pizza dough from our favorite local grocery store, Dorothy Lane Market. For a gluten-free pizza crust, try Simple Mills pizza dough mix. Any pizza crust will taste delicious with these toppings! 

Instructions

  1. Prepare pizza dough according to package directions. You will most likely need a non-stick baking stone or baking sheet lined with parchment paper. Set the oven to the appropriate temperature (approximately 450 F depending on your crust selection).
  2. Meanwhile, heat olive oil in a large skillet over medium heat. Add onions, stirring occasionally, and heat until caramelized (about 15-20 minutes).  
  3. For the balsamic glaze, add balsamic vinegar to a small pot. Then, simmer over low-heat until vinegar reduces by half (about 10-15 minutes).   
  4. Brush pizza crust with olive oil. Add caramelized onion, dried figs, and goat cheese. Bake for 5-10 minutes or until figs are warmed and cheese is melted. 
  5. After removing pizza from the oven, top with the desired amount of arugula and balsamic glaze. Cut into squares or triangles. Enjoy warm!
