You asked for more easy lunch recipes. This Edamame Veggie Wrap delivers! Packed with plant-based protein, colorful veggies, and a delicious green goddess dressing to bring it all together.
You don’t want to skip the Green Goddess Dressing! It really turns up the flavor. However, if you want the short-cut, purchase an already made dressing like my favorite one from Trader Joe’s.

Edamame Veggie Wrap
with Green Goddess Dressing
recipe for 1 wrap
INGREDIENTS
- 1 wrap of choice (I used Atoria’s Family Bakery)
- 1-2 tablespoons hummus
- ¼ cup shredded carrots
- ½ red bell pepper, sliced
- ¼ cup cooked edamame*
- 1 handful spinach
- Drizzle of Green Goddess Dressing
*if using frozen shelled edamame, be sure to cook according to package directions first
INSTRUCTIONS
- Spread hummus to cover wrap. Top with carrots, bell pepper, edamame, and spinach. Drizzle with a generous amount of the green goddess dressing. Wrap and secure with a toothpick as needed. Enjoy!
